These days people always talk about five senses. In fact, both tea and wine tasting involves five-senses enjoyment.

Sight:We can look at how the tea host does the tea ceremony. I really enjoy the moment when the tea is pouring out of the tea pot. To see how the tea drips slowly at the end is really healing. Also, obviously, we can appreciate the colour of the tea before tasting.

Hearing:The sound of tea leaves dropping into the teapot or cover cup is really nice. Pouring tea also creates natural sounds. Some tea hosts would put on relaxation music as background. Yet the most wonderful sound would be nature. If we brew tea outdoors, the sound of wind, birds and insects create an amazing orchestra.

Smell:we can nose the tea’s natural aroma and the aroma from the roasting and craftsmanship. See how it changes in every brew. Some tea hosts provide snifter glasses for nosing the tea, which avoid the mixing of our saliva and keep the purity of the aroma. Other than the tea aroma, I really enjoy nosing the bottom of the cup as well.

People said the aroma represents 60% of the enjoyment in wine tasting. For tea, aroma is also very important.

Touch: our fingers are warmed by the tea through the cups and tea pot.

Taste: A very important part of the enjoyment. We taste the array of tea flavours and feel the texture, as well as the evolution in each brew.

Other than the five senses, I believe one of the most interesting aspects is the “Sense in the body”. I learnt this term from my first tea ceremony teacher and I had experience in tasting the tea which really brings us warmth in the stomach or hands/ feets. Also, when I taste some Taiwanese high mountain tea, I can feel the main part of my body cooled and chilled.

For many times, a cup of tea helped ease my headache. I guess the hot tea really helps the blood and “air” circulation inside the body.

Therefore, tea tasting is not only a five-sense experience, but a Six-sense one!
