The biggest challenge comes. My big tummy teacher says, we have to keep calm during an urgent situation. Not pretend to stay calm. This is really difficult but I want to learn. 

For certain brews, we have to be quick but stay calm and relaxed at the same time. If the brewing time is over, the tea will become too intense and the brews after that will also be affected.   

This is like, there’s fire or war happening outside but we need to keep calm. Crazy! How can we stay chilled in such a situation? 

For tea brewing, we need to keep an eye on the boiling water, pour water, put the pot back, put the cover back… teacher, how can we make it fast with so much movement?

He replied: practice till you make it. Practice, practice, practice, until you are familiar with this. 

OK, that means we have to accumulate our experience until we are capable of managing it. 

However, I had bad experiences of which the stress affects my capability to solve urgent situations. My mind turned blank due to the stress. After calming down, I started to think of better ways to handle it but it was too late.   

I think of what an emergency room doctor says in Ted Talks. One way of handling stress is that you must understand, not all things throwing at you have to be dealt with the same level of emergency. They triage cases: very urgent, urgent, day-in and day-out. 

Even though they have to deal with really urgent cases in ER, they are not afraid because they know that they are capable of handling the cases. She also mentioned a few ways of turning “Crazy Busy” mode to “Ready” mode.

Tea brewing is like many other professions. Practice until you get it right. Practice until you have enough confidence. Let’s turn into your Ready Mode!
